Real wine.
A South Tyrolean story.
We asked ourselves why good wine has to be a compromise the moment the alcohol leaves. The answer is this bottle.
Our credo
Wine is a ritual. Alcohol is just one ingredient — not the ritual itself.
So we kept the wine and left out only the one thing nobody misses, once the glass is good enough. Real grapes, real vinification, real character. 0.0 % vol.

The origin
It begins on a hillside in South Tyrol.
At the start there was an estate in South Tyrol, traditionally pressed vintages and one simple observation: every non-alcoholic wine on the shelf tasted of doing without. Of grape must, of half-measures, of a compromise nobody had ordered.
So we turned it around. The wine first — fully vinified, with character and structure. Then, gently and under soft vacuum, only the alcohol. What remains is everything that counts: the fruit, the tannins, the long finish.
From that, Vinuci was born. No rebuilt aroma, no shortcut — real wine, missing only the one thing you don't miss.

A matter of taste
How to remove the alcohol without losing the wine.
Gentle vacuum instead of heat. Aromas saved first, then given back. A matter of degrees and patience.
